01 The Story

About the dish

Discover the story, flavours and traditions behind this local Kerala food.

The Culinary Story: Made from Scratch

Unlike modern quick-mix versions, our Idlis follow a traditional, multi-step process rooted in authentic Kerala kitchens:

  • Pure & Simple Ingredients: Made using raw white rice (Pachari), skinned black gram (Urad Dal), sea salt, and a touch of pure coconut oil.

  • Natural Fermentation: Rice and lentils are soaked for 4 to 6 hours, ground into smooth batters, and left to ferment naturally overnight for at least 8 hours to achieve a feather-light texture.

  • Traditional Steaming: The fermented batter is lightly poured into coconut-oil-greased plates and steamed to soft, pillow-like perfection.

Served With Authentic Local Sides

  • Fresh Kerala Coconut Chutney: Freshly grated coconut ground with green chillies and tempered in hot coconut oil with crunchy mustard seeds, dried red chillies, and fragrant curry leaves.

  • Aromatic Vegetable Sambar: Toor dal simmered with garden-fresh local vegetables, tamarind juice, roasted spices, and a final drizzle of pure coconut oil.
